Low Carb Chicken Fajitas
Serves 4
1 T olive oil
1.5 lb chicken breast
1 small onion sliced
1 red bell pepper
2 T olive oil
1/4 cup lime juice
1/4 cup water
1/4 cup chopped cilantro (optional)
1 t salt
Cut the chicken into strips and place in the marinade (olive oil, lime juice, water, cilantro, salt). Place in the fridge overnight.
Grill the chicken until mostly done. Move to the other burner. Grill the onions and peppers. Add the chicken and serve immediately.
If you are making this for 2, leave the avocado pit in half the avocado and wrap for leftovers next day.

2 sliced jalapenos
1 avocado2 T olive oil
1/4 cup lime juice
1/4 cup water
