Blackened Salmon

2 salmon fillets
2 tsp olive or macademia oil
1 T blackening spice

This is how we eat blackened salmon (the only way DH eats it). He makes it very hot so the cottage cheese is necessary to cool it off. Serve this with bhindi and 1/2 cup cottage cheese or caprese salad.
