Chicken and Mushroom Crustless Quiche

This is low carb like all of my breakfast recipes.  This complies with the 4 Hour Body except for the 1/4 of parmesan which I think is necessary for taste.  You could substitute the parmesan cheese by drizzling truffle oil over the top very lightly before serving.  If you do, be sure to adjust your counts.

Chicken and Mushroom Crustless Quiche
Serves 4

1 T coconut oil
1 1/3 cup egg whites
2 whole eggs
1 cup sliced mushrooms
1 cup diced cooked chicken breast
1/2 cup cottage cheese

Use 1 tsp coconut oil to grease the pan.  Preheat oven to 350 degrees.  Sautee the mushrooms in 2 tsp coconut oil.  Whisk the eggs, egg whites and cottage cheese together.  Add the chicken and sautéed mushrooms to the egg mixture and pour into a pie pan or 8 inch square pan.  Bake for 40 minutes.
