Caprese Salad

Caprese Salad
Serves 4

4 small ripe tomatoes
12 leaves basil, shredded
1 T olive oil
2 T balsamic vinegar
8 oz fresh mozzarella cheese

Slice the mozzerralla into 8 slices.  Layer between slices of tomato.  Mix vinegar and oil together in small cup.  Drizzle over the tomatoes and cheese.  Top with shredded basil.
