Beef Roast with Carrots, Onions and Mushrooms
serves 6

3 lb beef roast
6 large carrots, peeled cut into 8 pieces per carrot
1 whole medium onion
1 package whole button mushrooms
1/4 cup water
1 T coconut oil
1 T better than bouillon beef flavor

Put water in crockpot and add Better than Bouillon.   Turn crockpot on low and add the vegetables.  Brown your roast in 1 T of coconut oil.  Lay meat over veggies and cook on low for 8 hours or high for 5-6.
